Why a blog on GD?

I thought of writing something on diet for Gestational Diabetes (GD) when my daughter-in-law had GD last year. Being a vegetarian, she had very little choice when it came to American hospital diet. She was admitted in the hospital on the 26th week of gestation with high GD and for about 3 weeks, I had to manage her diet with proper calculation of carbohydrate, protein and fibre.With proper guidance and wonderful cooperation from her dietitian, we could keep her glucose level under control. She delivered a girl baby on her 29th week, and both mother and daughter are doing great today.

EASY  TASTY  POHA(AVAL) IDLI


Rice Flakes(Poha – Aval)
2 cups
Curd
1 cup
Green chilli
2
Ginger ground
1 tsp
Oil
1 tbsn
Onion( optional)
½ cup
Grated coconut(optional)
½ cup
Salt to taste

Coriander, curry leaves
handful
Mustard, urad and gram dhal to season
1 tsp each


1.     Wash the poha well.
2.     Allow it to stay for 5 minutes.
3.     Grind the soaked poha with curd, chilli, salt, coriander and curry leaves to a coarse batter.
4.     Microwave the onion bits for 2 minutes and add to the batter.
5.     Add coconut, ginger ground and asafoetida and mix well.
6.     It should be of adai batter consistency.
7.     Let the soaking time for the batter be 15 to 20 minutes.
8.     Now the batter will be very thick, add ½ cup of curd and ½ tsp of cooking soda and one tbsn of oil and mix well.
9.     Pour as idli in the idli pan.
10.  It takes nearly twice the time to get cooked than ordinary idli(say 15 to 20 minutes)
 Allow it to cool for sometime and serve with idli chilli powder
