Why a blog on GD?

I thought of writing something on diet for Gestational Diabetes (GD) when my daughter-in-law had GD last year. Being a vegetarian, she had very little choice when it came to American hospital diet. She was admitted in the hospital on the 26th week of gestation with high GD and for about 3 weeks, I had to manage her diet with proper calculation of carbohydrate, protein and fibre.With proper guidance and wonderful cooperation from her dietitian, we could keep her glucose level under control. She delivered a girl baby on her 29th week, and both mother and daughter are doing great today.

SIMPLE GREENS (SPINACH) THOGAIYAL

KEERAI THOGAIYAL
                                                     
A very simple and valuable recipe on greens (keerai)

Palak or mulaikeerai
One bunch
Mustard
1 tsp
Urad dhal
2 tsp
Bengal gram dhal
2 tsp
Green chilli
1
Red chilli
1
Grated coconut(optional)
2 tbsn
Tamarind paste
1 tsp
Oil
Tsp
Salt to taste

Cumin seeds(Jeera) raw
1tsp


1.     Wash the greens (no need to cut them) and microwave it without water for 4 minutes.
2.     In a tawa pour one tsp of oil and fry mustard, urad dhal and gram dhal with green and red chilli.
3.     First grind the fried dhals and raw jeera with salt.
4.     Add tamarind paste and coconut and grind well.
5.     Add the greens (by this time it would have cooled down) and grind well.
6.     There is no water and not much of oil and the greens are not cooked for a long time (by this it will not lose its nutritious value).
7.     An excellent dish to have with rice, chappathi or as a side dish with curd rice.
8.     It can also be a very good filling for bread sandwich.
