Why a blog on GD?

I thought of writing something on diet for Gestational Diabetes (GD) when my daughter-in-law had GD last year. Being a vegetarian, she had very little choice when it came to American hospital diet. She was admitted in the hospital on the 26th week of gestation with high GD and for about 3 weeks, I had to manage her diet with proper calculation of carbohydrate, protein and fibre. With proper guidance and wonderful cooperation from her dietitian, we could keep her glucose level under control. She delivered a girl baby on her 29th week, and both mother and daughter are doing great today.

MASALA PUFFED RICE

MASALA PUFFED RICE

A very light snack for the evening. One can eat stomach full without bothering much about calorie. It is a good snack of all time for diet conscious people.

Puffed Rice
6 cups
Dry roasted groundnut
1 cup
Fried gram( pottukadalai)
1 cup
Curry leaves
1 cup
Turmeric powder
1 tsp
Rasa powder
2 tsp
Asafoetida powder
1 tsp
Oil
2 tbsn
Salt as required

  1. Take a broad tawa and pour one tbsn of oil in it.
  2. Microwave the curry leaves for 2 minutes(by doing this, the leaves will not absorb oil much)
  3. Fry the curry leaves in the oil.
  4. Add the roasted groundnut, fried gram and just ½ tsp of salt.
  5. Fry these well and take out and keep.
  6. Pour the other tbsn of oil in the tawa and heat it.
  7. Add the turmeric, rasam powder and asafetida powder and roast them a little in low fire.
  8. Add the puffed rice to it and fry the rice in low fire till the puffed rice becomes very crisp.
  9. Add the groundnut, fried gram and curry leaves to the puffed rice and mix very well.
  10. Allow it to cool and store in an airtight container. This will be fresh and crisp for even 10 days.
Note: One can calculate the calorific value from the table given underneath. Usually, one cup of masala puffed rice will have 20 gms of groundnut and 20 gms of fried gram. So do some calculation for the calories.
