Why a blog on GD?

I thought of writing something on diet for Gestational Diabetes (GD) when my daughter-in-law had GD last year. Being a vegetarian, she had very little choice when it came to American hospital diet. She was admitted in the hospital on the 26th week of gestation with high GD and for about 3 weeks, I had to manage her diet with proper calculation of carbohydrate, protein and fibre.With proper guidance and wonderful cooperation from her dietitian, we could keep her glucose level under control. She delivered a girl baby on her 29th week, and both mother and daughter are doing great today.

OATS cum RAVA IDLI




Bansi Rava cum oats idli
For oats lovers:






 
An excellent nutritious tiffin item very easy to make. It can be made with any rava or sooji, Bansi, white or samba Rava. First get 1/2 kg or one kg of ordinary oats, say Quaker Oats, dry fry it for five to ten minutes, do not over fry, let it cool and grind it in the mixer grinder into a coarse powder and preserve it in an air tight container. Now to the idli
Oats powder. 1 cup
Rava. 1 cup
Green chilli nicely cut. 2 tsp
Ginger ground. 1 tsp
Grated coconut. 1 tbsp
Curd. 11/2 cups.
1. Put a tawa on stove, add 4 tsp of oil, season mustard, split urad dal, cashew, curry leaves and fry them till done.
2. Add the oats rava powder into it and fry just for two minutes.
3. After it cools, add curd and required salt with one tsp of asafoetida and one tbsp of grated coconut , mix well and let it stand for 10 to 15 minutes for the rava to soak well.
4. The mixed batter should be of idli batter consistency. If it is thick add a quarter cup of water. Finally before pouring it into idli moulds, add half a tsp of cooking soda and one tbsp of ghee and mix well.
5. Then pour it into idli moulds and allow it to get cooked.
6. It will take longer than regular idli and idli podi is the best combination.Try and enjoy.
I tried with Bansi rava it came out really well.
