Why a blog on GD?

I thought of writing something on diet for Gestational Diabetes (GD) when my daughter-in-law had GD last year. Being a vegetarian, she had very little choice when it came to American hospital diet. She was admitted in the hospital on the 26th week of gestation with high GD and for about 3 weeks, I had to manage her diet with proper calculation of carbohydrate, protein and fibre. With proper guidance and wonderful cooperation from her dietitian, we could keep her glucose level under control. She delivered a girl baby on her 29th week, and both mother and daughter are doing great today.

Healthy Oats -Spinach Adai

Having an Oats spree now. Hope and pray some Oats company gives me some commission.
Nutritious Oats -Spinach Adai
Measurements for 8 small adais.
Oats one small cup-- dry roast and keep
Toor dhal --one cup
Bengal gram --1/2 cup
Urad dhal --2 tsp
Minced onion--one cup
Cut coriander leaves-- 1/2 cup
Minced spinach leaves--1cup
Coconut scraping--1/2 cup(optional)
Soak the dhals for an hour.
Grind them coarsely with two green chilli, one red chilli, ginger, coconut and salt. Add the roasted oats lastly and grind for a second.
Mix the coriander leaves and spinach to the batter.
Spread the batter on a non stick tawa like adai , turn sides, sprinkle a tsp of oil and take out golden brown.
These oats dishes will not be crispy like rice dishes, but they are very soft and highly suitable for afternoon lunch boxes.
Any side dish like sambar, chutney or idli podi will go well with this adai.
