Why a blog on GD?

I thought of writing something on diet for Gestational Diabetes (GD) when my daughter-in-law had GD last year. Being a vegetarian, she had very little choice when it came to American hospital diet. She was admitted in the hospital on the 26th week of gestation with high GD and for about 3 weeks, I had to manage her diet with proper calculation of carbohydrate, protein and fibre.With proper guidance and wonderful cooperation from her dietitian, we could keep her glucose level under control. She delivered a girl baby on her 29th week, and both mother and daughter are doing great today.

Broken or Cracked Wheat Pongal
                                  
  

Ingredients: -
1. Broken Wheat                                 1 cup
2. Yellow split Moong Dhal                 1 cup
3. Pepper Jeera granules                    2 tsp
4. Ghee                                                1 tbsn
5.Oil                                                     1 Tbsn
6. Curry leaves(crushed)                    2 tsp
7. Cashew nuts                                    1 tbsn
8. Salt to Taste
9.Turmeric powder                              1/2 tsp

Method:
1. Wash broken wheat and dhal together thoroughly and drain.
2. Pour 4 cups of water in it and allow it to soak for 1 hour.
3. Add turmeric powder and pressure cook it with the same water till 4 or 5 whistles. 
4.Allow it to cool and open the cooker.
5.Mash the pongal while it is hot.Have it in my mind that broken wheat will not mash so thoroughly like white rice pongal.It will be a little coarse to look at, but  soft to eat.
6. Season cashew, pepper jeera granules and curry leaves in ghee and add to the pongal.
7.Add required salt and one tbsn of raw oil to make the pongal loose and soft.
8. Serve it hot with sambar or tomato chutney.
