Why a blog on GD?

I thought of writing something on diet for Gestational Diabetes (GD) when my daughter-in-law had GD last year. Being a vegetarian, she had very little choice when it came to American hospital diet. She was admitted in the hospital on the 26th week of gestation with high GD and for about 3 weeks, I had to manage her diet with proper calculation of carbohydrate, protein and fibre.With proper guidance and wonderful cooperation from her dietitian, we could keep her glucose level under control. She delivered a girl baby on her 29th week, and both mother and daughter are doing great today.

Easy Maida - Khova Cake

An  Easy Cake


Maida Flour
1 cup
Khova
½ cup(100 Gms)
Sugar
1 ½  cup
Ghee
3 tbsn
Vanilla essence
½ tsp


  1. In a broad non stick tawa in one tablespoon of ghee fry the maida till a good aroma comes.
  2. Mix the khove with it when the flour is hot, so that both will blend well together.
  3. Take it out of the tawa and keep aside.
  4. Pour the sugar in the tawa and add 2 tbsn of water and let it boil well till  thick sugar syrup is obtained.( If you put a drop on a plate, it will stand like a pearl, or if you pull a drop between thumb and first finger, it will lengthen like a thread)
  5. Close the stove and add the maida mix with Vanilla essence to the syrup and add one tbsn of ghee.
  6. Stir well continuously till the cake batter thickens and leaves the sides.
  7. Add the remaining ghee to it, mix well and pat it on a greased plate.
  8. Allow it to cool and cut it into small squares.
