Why a blog on GD?

I thought of writing something on diet for Gestational Diabetes (GD) when my daughter-in-law had GD last year. Being a vegetarian, she had very little choice when it came to American hospital diet. She was admitted in the hospital on the 26th week of gestation with high GD and for about 3 weeks, I had to manage her diet with proper calculation of carbohydrate, protein and fibre.With proper guidance and wonderful cooperation from her dietitian, we could keep her glucose level under control. She delivered a girl baby on her 29th week, and both mother and daughter are doing great today.

Crispy Salad of Puffed Rice

 


Crispy Salad with Puffed Rice


Puffed Rice(pori)
2 cups
Uniformly cut vegetables like onion,capsicum,carrot and cucumber
2 cups
Chat powder or rasa podi
1 tsp
Roasted groundnut
½ cup
Friedgram
½ cup
Cut coriander leaves
1 tbsn
Oil
2 tbsn
Turmeric powder
½ tsp


1.     In a broadbased tawa,pour one tbsn of oil and add chat powder or rasa podi and turmeric powder. Add puffed rice and in medium flame roast the puffed rice to crisp consistency.
2.     Add roasted groundnut and friedgram to it and mix well and keep aside.
3.     In the same tawa pour one tbsn of oil and sauté all the vegetables with a little salt ( puffed rice has salt in it) to half cooked consistency.
4.     Add ½ tsp of chat powder to it and mix well and keep aside
5.     Do not mix crispy puffed rice and sautéed vegetables before serving.
6.     Just before serving, mix both and serve so that the salad will retain its crispness while eating.
7.     A very easy and calorie free evening snack( best suited for kolu evening) as puffed rice has very low calorific value and all the vegetables are good for health.
8.     No side dish is needed as such. If preferred, can add a little red sweet and sour tomato sauce on top to make it attractive for kids.
