Why a blog on GD?

I thought of writing something on diet for Gestational Diabetes (GD) when my daughter-in-law had GD last year. Being a vegetarian, she had very little choice when it came to American hospital diet. She was admitted in the hospital on the 26th week of gestation with high GD and for about 3 weeks, I had to manage her diet with proper calculation of carbohydrate, protein and fibre.With proper guidance and wonderful cooperation from her dietitian, we could keep her glucose level under control. She delivered a girl baby on her 29th week, and both mother and daughter are doing great today.

VEGETABLE IDLI

Vegetable Idli:

I read recently in a magazine that Idli is best for diabetic patients as the urad dhal in the idli controls sugar.
Whether it is scientifically proved or not, nobody can refuse that Idli is the best food for all ages. When you make Idli with vegetables, it adds to its value.
Idli Batter                                       --  4 cups
Vegetables cut into tiny bits             -- 1 cup
Oil                                                  -- 2 tsp
Cumin seeds                                   -- 1tsp
Season cumin seeds in the oil and add cut vegetables to it with a little salt. Do not add water. Let the vegetables get cooked in the steam itself. Keep the stove low and close the tawa so that the vegetables will get cooked. Allow the vegetables to cool before adding them to the idli batter.Mix them well and pour in idli plates and cook. It will be very healthy for young children, who refuse to take vegetables and idli separately.It will be colourful also as carrot, beans and all will be there. Better to avoid watery vegetables like snake gourd, tomato and all.
