Why a blog on GD?

I thought of writing something on diet for Gestational Diabetes (GD) when my daughter-in-law had GD last year. Being a vegetarian, she had very little choice when it came to American hospital diet. She was admitted in the hospital on the 26th week of gestation with high GD and for about 3 weeks, I had to manage her diet with proper calculation of carbohydrate, protein and fibre.With proper guidance and wonderful cooperation from her dietitian, we could keep her glucose level under control. She delivered a girl baby on her 29th week, and both mother and daughter are doing great today.

BROKEN WHEAT PONGAL

Broken Wheat Pongal
 This is an extremely nutritional dish as it has equal amount of moong dhal along with broken wheat.Moong dhal, is supposed to be the best of all dhals as it has high healing property of all stomach disorders. Moreover the carb content is less in moong dhal compared to toor dhal.
Broken Wheat                  -- 1 cups
Moong dhal                      -- 1 cups
Pepper jeera granules        -- 2 tsp
Ginger ground                   -- 1tsp
Ghee                                --  3 tsp
Refined oil or any corn oil --  3 tsp
Salt to taste
Curry leaves                      -- a handful

Fry  broken wheat and moong dhal till good aroma comes.For 2 cups of wheat and dhal together add 4 to 5 cups of water and cook in the pressure cooker  till 3 whistles.When cooker can be opened, open it, and mash the pongal well while hot.Season pepper jeera granules, ginger ground and curry leaves and add them to the pongal.Add salt and the oil and mix well and serve hot.This is the best morning breakfast for all, esp for GD patients.
