Why a blog on GD?

I thought of writing something on diet for Gestational Diabetes (GD) when my daughter-in-law had GD last year. Being a vegetarian, she had very little choice when it came to American hospital diet. She was admitted in the hospital on the 26th week of gestation with high GD and for about 3 weeks, I had to manage her diet with proper calculation of carbohydrate, protein and fibre.With proper guidance and wonderful cooperation from her dietitian, we could keep her glucose level under control. She delivered a girl baby on her 29th week, and both mother and daughter are doing great today.

Green Gram Sprout Poli

Green Gram Sprouts Poli

Green gram Sprouts                -- 1 cup
Grated Coconut( optional)      -- 2 tbsn
Green chilli                              --2
Red chilli                                 -- 1
Coriander leaves                    -- a handful
Asafoetida                               -- 1/2 tsp
Ginger ground                         -- 1 tsp
Salt to taste

For outer dough     -- Multi grain atta or wheat flour      -- 3 cups
Mix the flour with salt and 2 tsp of oil and make it to a dough of chappathi dough consistency and keep.It is better to blend the dough with warm water to give smooth poli.

Filling:
1. Microwave the sprouts with a handful of water in a closed dish for five minutes.
2. Take it out and microwave it again for 4 minutes.
3. Allow it to cool.
4. Grind the sprouts, coconut, chilli,corinader leaves, asafoetida with salt well in the mixer.
5. Add a little water for the ground to become smooth.
6 .Grind it well to get a smooth dough.
7. Keep the tawa in the stove, pour just 2 tsp of oil, season mustard and add the ground dough and mix it well just for 2 minutes.
8. You will get smooth filling and make it into small balls and keep.
9. If it is very dry, add a little water to make it smooth and binding.
10. Roll the flour into small chappathi, keep one filling ball in it, fold it well and roll it again like a full chappathi.
11. Bake it on a tawa sprinkling very little oil on both sides.
12. When dark brown spots appear on the poli it is done.
It is an excellent highly nutritious dish for everybody, not only for diabetic patients.Try it and enjoy.
