Why a blog on GD?

I thought of writing something on diet for Gestational Diabetes (GD) when my daughter-in-law had GD last year. Being a vegetarian, she had very little choice when it came to American hospital diet. She was admitted in the hospital on the 26th week of gestation with high GD and for about 3 weeks, I had to manage her diet with proper calculation of carbohydrate, protein and fibre.With proper guidance and wonderful cooperation from her dietitian, we could keep her glucose level under control. She delivered a girl baby on her 29th week, and both mother and daughter are doing great today.

VATHAL KUZHAMBU

VATHAL KUZHAMBU

Vathal kuzhambu is one of the quickest and easiest dishes to prepare. It tastes divine in cool winter after a tiring day.



Powder: Ingredients
Red chillis.                  One cup
Dhania.                        One cup
Bengal gram.               Two tbs
Methi seeds.                 One tbs
Raw rice.                      One tbs

1.Fry chilli’s in a tsp of oil and keep aside.
2. Fry the methi seeds, then add dhania, rice and Bengal gram and fry them till red.
3.Allow to cool
4. Grind into a nice powder and store in an airtight container.

Now to make Kuzhambu
1. There are many ready made Vathal available in stores like cluster beans, sundakai, manathakkali etc. You can choose anything as per your taste.
2. If not you can use sambar onion, ladies finger and drumstick also. Fresh vegetables sauté well and added to Vathal Kuzhambu will give a fresh taste.
3. Fried papad crushed into the Kuzhambu will also give a different taste.
4.Take a big lemon size tamarind , mix well with warm water adding sufficient salt. Make the tamarind solution and keep aside.
5.If you use tamarind paste take one full tsp, mix it with water and salt. If the Vathal is pre salted, reduce the amount of salt in the solution.
6.Fry the Vathal in three or four tsp of sesame oil(remember) Vathal Kuzhambu needs a good amount of oil after seasoning mustard and curry leaves and asafoetida in the oil.
7. If vegetables are used, add them in the oil and sauté them well before adding tamarind solution.
8.Add the tamarind solution now and allow it to boil till the raw smell of tamarind goes off.
9.Then add 3 tsp ( or more if the amount of Kuzhambu is more) of Vathal Kuzhambu powder in quarter cup of water,mix well adding one tsp of jaggary and mix it well into the boiling Kuzhambu. Let it be on stove in medium flame(remember to keep the flame medium always)just for two boils.
10. Garnish it with a good quantity of curry leaves and enjoy eating.
11. We have added raw rice to the powder but if the Kuzhambu is still a little Walters, add one tsp of rice flour in two tsps of water and mix with the Kuzhambu before switching off the stove
