Why a blog on GD?

I thought of writing something on diet for Gestational Diabetes (GD) when my daughter-in-law had GD last year. Being a vegetarian, she had very little choice when it came to American hospital diet. She was admitted in the hospital on the 26th week of gestation with high GD and for about 3 weeks, I had to manage her diet with proper calculation of carbohydrate, protein and fibre.With proper guidance and wonderful cooperation from her dietitian, we could keep her glucose level under control. She delivered a girl baby on her 29th week, and both mother and daughter are doing great today.

MULTI PURPOSE PODI

A POWDER FOR EASY AND QUICK COOKING

Bengal gram dhal                             1 cup
Urad dhal                                        1 cup
Coriander seeds (dhania)                 1 cup
Red chilli                                         4

Dry fry all this one by one.
Allow it to cool.
Grind it into coarse powder and keep in an airtight container.
Keep this powder in the fridge to retain the flavour for long.

DIFFERENT CHUTNEYS OR THOGAIYALS WITH THIS POWDER

1.Coconut thogaiyal
In the mixie jar, take 4 tablespoons of grated coconut, one tsp tamarind paste, one or two green chilli,salt to taste and 2 tsp of this multi purpose powder and grind well to a somewhat coarse chutney or thogaiyal.
If it is to be used for just one serving, no need to saute it or microwave it.
