Why a blog on GD?

I thought of writing something on diet for Gestational Diabetes (GD) when my daughter-in-law had GD last year. Being a vegetarian, she had very little choice when it came to American hospital diet. She was admitted in the hospital on the 26th week of gestation with high GD and for about 3 weeks, I had to manage her diet with proper calculation of carbohydrate, protein and fibre.With proper guidance and wonderful cooperation from her dietitian, we could keep her glucose level under control. She delivered a girl baby on her 29th week, and both mother and daughter are doing great today.

Lime , the Lifesaver, Ginger, the Great, Green chilli for taste

Benefits of Lime
     The health benefits of lime include weight loss, skin care, good digestion, relief from constipation, eye care, and treatment of scurvy, piles, peptic ulcer, respiratory disorders, gout, gums, urinary disorders, etc.   The first fruit that comes to our minds when it comes to medicinal uses is perhaps the good old lime. This sour citrus fruit can do what many specialist medicines cannot. Lime, bearing the scientific name Citrus Aurantifolia, is being used for ages for treatment of various ailments.  


Ginger, the Great     
Ginger is most commonly known for its effectiveness as a digestive aid. By increasing the production of digestive fluids and saliva, Ginger helps relieve indigestion, gas pains, diarrhea and stomach cramping. The primary known constituents of Ginger Root include gingerols, zingibain, bisabolenel, oleoresins, starch, essential oil (zingiberene, zingiberole, camphene, cineol, borneol), mucilage, and protein. Ginger root is also used to treat nausea related to both motion sickness and morning sickness. Ginger has been found to be even more effective than Dramamine® in curbing motion sickness, without causing drowsiness. Ginger's anti-inflammatory properties help relieve pain and reduce inflammation associated with arthritis, rheumatism and muscle spasms. Ginger's therapeutic properties effectively stimulate circulation of the blood, removing toxins from the body, cleansing the bowels and kidneys, and nourishing the skin. Other uses for Ginger Root include the treatment of asthma, bronchitis and other respiratory problems by loosening and expelling phlegm from the lungs. Ginger Root may also be used to help break fevers by warming the body and increasing perspiration.
 GreeenChilli for Taste
The Great thing about green Chile you can eat all you want and not get fat. Green Chile is fat free, low on calories, almost no cholesterol and has lots of fiber. Green Chile helps build up your immune defense system because it has lots of Vitamin C, even 6 times more than an orange. When Chili turns red it's loaded with vitamin A. Chile doesn't just taste great it's great for you. Even the ancient people such as the Mayans used it on a regular basis as a medicine.
    An Easy Pickle with all the three great things, -Lime, Ginger and Green Chilli.      
                                                            
 Pickle just for a week.
Yellow Lime                       6
Tender Ginger                    1 inch piece
 Green chilli                       3
 Asafoetida                        1/2 tsp
 Salt to taste
 Oil to season                    just one tsp
 Mustard                           1 tsp
 Methi seeds                      1/2 tsp
1. Cut 5 limes( keep one aside) into small pieces(say one eighth)
2. Cut ginger piece into small bits after removing the skin.
3. Cut the chill into just half.
4. Keep all three together without salt in a closed vessel without water in the pressure cooker and cook well till 3 or 4 whistles.
5. Season the mustard and methi seeds in a pan in one tsp of oil and put the cooked lime, ginger,chilli pieces and saute well.Add salt and turmeric powder and keep under low fire for 5 minutes and close the stove.
6. After it cools down, cut the left over lime and pour the juice in the pickle and stir well.This is to take away the bitter taste in the pickle.
7.The pickle is ready to taste.
