Why a blog on GD?

I thought of writing something on diet for Gestational Diabetes (GD) when my daughter-in-law had GD last year. Being a vegetarian, she had very little choice when it came to American hospital diet. She was admitted in the hospital on the 26th week of gestation with high GD and for about 3 weeks, I had to manage her diet with proper calculation of carbohydrate, protein and fibre.With proper guidance and wonderful cooperation from her dietitian, we could keep her glucose level under control. She delivered a girl baby on her 29th week, and both mother and daughter are doing great today.

TOMATO SPECIAL RICE

VARIETY RICE WITH TOMATO IN BASUMATI

Having known the benefits of both Tomato and Basumati Rice, let us combine them in one good variety rice.
Basmati Rice                          -- 2 cups
Tomato( Big and Ripe)           -- 4
Onion                                     -- 2
Green chilli                              -- 2
Turmeric Powder                    -- 1/2 tsp
Curry leaves                            -- 1 tbsn
Salt to taste


To powder:
Bengal Gram                             -- 1 tbsn
Dhania                                      -- 1 tbsn
Red Chilli                                  -- 2
Coconut gratings( Optional)       -- 1 tbsn
Urad dhal                                  -- 1 tsp
Dry fry all the dhals and chilli and grind them into coarse powder
1. Wash basmati rice just once and soak it for half an hour in 3 cups of water.
2. When it is getting soaked, fry and grind the powder and cut tomato and onion into small pieces.
3. Keep a big non stick tawa with a lid on fire and pour 4 tsp of oil in it
4. Season jeera and green chilli in it and add onion to it.
5. When the onion is transparent, add the basmati rice with the soaked water and salt and close the tawa.
6. Allow it to boil for 5 minutes and then add the tomato pieces.
7. In 10 minutes, the tomato rice will be ready and all the water in the rice will be absorbed.
8. Add the ground powder and mix very softly so that the rice is not broken.
9. Add curry and coriander leaves after closing the stove.
10. If preferable, we can add a tbsn of cashew and raisin fried in a tbsn of ghee.
11 .A very simple variety rice is ready.As it is tomato based, it will not go dry even for afternoon lunch.
