Why a blog on GD?

I thought of writing something on diet for Gestational Diabetes (GD) when my daughter-in-law had GD last year. Being a vegetarian, she had very little choice when it came to American hospital diet. She was admitted in the hospital on the 26th week of gestation with high GD and for about 3 weeks, I had to manage her diet with proper calculation of carbohydrate, protein and fibre.With proper guidance and wonderful cooperation from her dietitian, we could keep her glucose level under control. She delivered a girl baby on her 29th week, and both mother and daughter are doing great today.

TOMATO CHUTNEY - SEVEN IN ONE

SEVEN IN ONE

This is a Chutney or Thogaiyal, as you may call it, that will go with all food as a side dish.You just try and comment on it.
Big ripe Tomato
4 or 5
Big Onion
3
Garlic flakes (optional)
10
Ginger paste
1 tsp
Tamarind paste
2tsp
Coriander leaves
One cup
Chilli powder
2 tsp
Turmeric powder
1 tsp
Oil ( gingilee)
1 cup
Salt to taste

1. Season 1 tsp of mustard  in one cup of oil
2. Microwave the tomatoes for 2 minutes and peel off the skin.
3. Grind the tomato, onion, garlic, ginger, tamarind, coriander leaves with salt to a smooth paste.
4. Keep a nonstick tawa on stove and season mustard in a cup of oil.
5. Then add the ground paste to it with turmeric and chilli powder and sauté well till the oil separates.
6. If preferable, can add a tsp of jaggary powder at the end.
7. This is a chutney which will go very well with rice, bread, dosai and chappathi.
