Why a blog on GD?

I thought of writing something on diet for Gestational Diabetes (GD) when my daughter-in-law had GD last year. Being a vegetarian, she had very little choice when it came to American hospital diet. She was admitted in the hospital on the 26th week of gestation with high GD and for about 3 weeks, I had to manage her diet with proper calculation of carbohydrate, protein and fibre. With proper guidance and wonderful cooperation from her dietitian, we could keep her glucose level under control. She delivered a girl baby on her 29th week, and both mother and daughter are doing great today.

IDLI --- Varieties

Idli is a staple tiffin for all in South India. It is the best tiffin possible for small kids as it has all nutrients like carbohydrate, protein and  fibre. But for GD patients, how far it is advisable to give idli is a question. So I would like to take diversion from regular idli and try to make it more protein rich and carb less.
SOY IDLI
 Idli Rice            -- 2 cups
 Urad dhal          -- 1/2 cup
 Thick poha
 (Rice flakes)       --  1/2 cup
White Soy Beans -- One Tablespoon
Soak rice, urad dhal and soy beans together for 3 to 4 hours.Soak poha separately. Wash them well and grind them together to a smooth paste, a little tight. Let it ferment overnight. Then add just one teaspoon of sesame oil to the batter, mix well and pour in the idli plates and cook well. This idli will serve the purpose of a good tiffin to all esp GD patients. But see to it that you consume just one or two at a time and of course others,
can take it depending upon their weight consciousness!!!
