SIMPLE BADHUSHA FOR DIWALI
Badhusha is a sweet liked by all kids. Prepared with care, it will be like doughnuts to the kids.The recipe follows:
Maida -- 2 cups
Sugar -- 2 cups
Butter -- 2 tablespoon
Curd -- 2 tablespoon
Powder sugar -- 1 tablespoon
Cooking soda or
Baking powder -- 1/2 tsp
Cardamom Powder -- 1/2 tsp
Salt -- a pinch
Oil to fry
1. In a broad based vessel, mix butter, curd,cooking soda, salt and powder sugar well to get a frothy batter.
2. Add maida to it and knead it well to get chappathi knead consistency.If it is a little hard, add some milk and knead it well.It should be soft and at the same time firm enough to roll out like chappathi.
3. Divide the kneaded flour into 4 or 5 balls. Roll each ball like chappathi, but a little thick.Just make tiny holes in the chappathi with a fork here and there. This is to make the inside of the badhusha to get baked well.
4. Cut it into small circles with a suitable lid. Do all the mix like this.
5. Keep oil in the stove, do not allow it to fume.Keep the fire to medium strngeth so that the inside of the badhusha will get cooked well. Keep them aside.
6. Keep the sugar in another broad based vessel, add just half a cup of water and allow it to boil well. The jeera(sugar syrup) should be of double string consistency.In other words, if you pour a drop of syrup on a small plate, it should stand like a pearl, should not run loosely.
7. Add cardamom powder and close the stove.
8. Soak the badhushas into the jeera and take them out after five minutes and arrange on a flat plate.
9. After 10 minutes take each one carefully out of the plate and place them on another plate so that they will not be sticky.
10.Allow it to cool and enjoy eating.
